Florindo Fierro is a master baker and consultant to bakeries and artisan bakeries throughout Spain. He is a leading expert in the sector in Spain and a pioneer of new trends.
He has a deep understanding of the world of bread and thorough knowledge of flours, having trained in Spain, Switzerland and Italy. He started his consultancy career in the bread boutiques of 1980s Madrid. He has taught at the Madrid School of Baking (ASEMPAN) and advised top-tier restaurants such as Paraguas, Amazónico and Ten con Ten on incorporating bread into the dining experience.
He has also served as a judge in competitions such as the Spanish Artisan Bakery Championship and the Miga de Oro.
