Professor of Food Technology at the University of Santiago de Compostela (Santiago de Compostela)

Not only is she the first Galician woman to hold a professorship in Food Technology at the University of Santiago de Compostela, but she is also Director of the Institutional Chair in Bread and Cereals. This comprehensive project covers the entire ‘farm-to-table’ process. She coordinates the research group “Sensory Analysis, Nutritional Assessment and New Food Development” and focuses her research activity on these areas, leading and participating in various projects, including international, national and regional projects, as well as development cooperation projects in Central America.
A pioneer in Galicia in applying sensory analysis to food, she established the spin-off company TASTELAB S.L., the first sensory analysis technology company. She is a founding partner and a member of the Board of Directors.
She collaborates with various organisations and public bodies to promote healthy, sustainable eating, and local cuisine.She also represents the University of Santiago de Compostela in various organisations and is a member of the Galician Academy of Gastronomy.
