Beyond the awards: day-to-day life in the bakery

They have all received awards, including two World Baker Awards, a Miga de Oro and the title of Best Panettone, and they are surely pleased with that. However, the talk will go beyond the awards, and we will ask about the mundane aspects of day-to-day life.
We will ask about their routines, their 'tricks and secrets', the everyday things they do, what they value in flour and mixers, and what they value in a good recipe, whether they are reading it or devising it from scratch. We will also ask about what they value in a good book or baking manual. In other words, let's not focus on their awards, but on their work as bakers. We want to know what they do behind the scenes, away from the spotlight.
